Chemex
You will need:
- 1 Chemex
- 1 paper filter for Chemex
- 500g of water
- 1 stopwatch
- 30 to 35g of ground coffee for paper filter
- 6 cups
Duration: 3.5 to 4 minutes of filtration
A Chemex produces a very refined and aromatic coffee, with a crystal-clear finish.
Preparation method
- Heat 1 liter of water to 94°C. If you don't have a thermometer, you can bring the water to a boil and then let it cool for 30 to 40 seconds without covering.
- Fold the filter, place it in the Chemex, and rinse thoroughly with at least 50 cl of water. This way, you prevent the coffee from tasting like paper. Remove the filter from the Chemex, drain the water, and reinsert the rinsed filter into the Chemex.
- Place 30 to 35g of ground coffee in the filter and place the Chemex on a scale.
- Start the stopwatch. First, pour 100g of water. It's important that all the coffee gets wet. Wait 45 seconds. This way, the coffee can absorb the water and degas.
- Pour another 100g of water. Do this in concentric circles, always clockwise. Pour another 100g of water every 30 to 40 seconds until you reach 500g of water.
- The total time should be 3.5 to 4 minutes. If the coffee flows faster, the coffee is ground too coarsely. If it flows too slowly, the grind is too fine.
