Perched west of Loja, Ecuador, Manuel Romero’s Finca Indera is an exceptional plantation nestled within a lush and preserved ecosystem. This coffee comes from Lot 1, a unique area where Manuel cultivates a natural mutation of the Geisha variety, which he has named “Peach.” Passionate and meticulous, he oversees every step of production, from tree care to roasting in his own roastery in Loja. The farm benefits from an ideal climate thanks to its altitude and diverse vegetation, a true sanctuary where each coffee plant thrives under a natural canopy that regulates humidity and soil fertility. This coffee is processed using the Honey method, where fully ripe coffee cherries are delicately depulped while retaining their sweet mucilage. Unlike washed or natural coffees, fermentation occurs with this protective layer, thus intensifying the aromatic complexity of the bean. Drying then takes place in a warehouse with controlled temperature and humidity, ensuring a uniform and stable result. This precise approach enhances the Geisha Peach variety, a rare mutation that appeared on Manuel's farm, whose cherries display a vibrant orange hue when ripe and release a sweet and floral fragrance. This coffee reveals a bright and refined cup with vibrant aromas. From the first sip, lively notes of mandarin emerge, followed by a delicate floral touch evoking jasmine. On the finish, a silky sweetness reminiscent of white peach prolongs a soft and sweet sensation.
