This coffee is grown in the department of Huehuetenango, one of Guatemala's highest and driest coffee-producing regions. Located between 1,500 and 1,800 meters above sea level, the plantations benefit from a unique climate: despite the coolness of the mountains, a warm wind from the Tehuantepec plains in Mexico protects the crops from frost during the coldest months. Clay soils, annual rainfall of around 1,300 mm, and average temperatures between 20 and 24°C create ideal conditions for producing high-quality Strictly Hard Bean coffees. Production is mainly carried out by small producers, often from local Mayan communities. Due to the isolation of the region and the abundance of rivers and streams, each producer can process their coffee near the plots. The cherries are harvested manually in three passes, then fermented for approximately 24 hours before being sun-dried. Both manual and mechanical sorting ensure consistent and meticulous quality. Made from different Arabica varieties, all classified as SHB, this coffee reveals in the cup a fine acidity, a full and structured body, as well as elegant fruity notes of blackcurrant, green tea, and cocoa, which give it a beautiful length on the palate.
