Colombia "La Estrella", an exceptional new coffee whose name means "The Star".
Alirio Rodriguez, owner of the plantation, has been producing coffee for over 30 years. He represents the third generation of coffee producer. When he was 15 years old, he bought his farm, Finca El Recreo, based in the Huila region - one of Colombia's best-known coffee growing regions. Since 2018, he has switched to specialty coffee. Today, joined by two of his children, he offers high quality coffees allowing him to earn a good living.
Once ripe, the red coffee cherries are harvested and then fermented, anaerobically, in sealed bags for 100 to 120 hours. Once out of the bags, they are dried on raised beds for 15 to 20 days. Cherries are turned frequently to ensure even drying.
Colombia "La Estrella" comes from a natural genetic mutation of the Caturra variety called Caturron. This variety was recently discovered in Colombia and only exists in Colombia where it is very rare and limited. It has the perks of being hardy, resistant to leaf rust and has relatively high yields. This coffee with unique flavors offers a fragrant aromatic profile.
Our version of the coffee Colombia "La Estrella" has a sweet intensity, it is acidulous with biscuit and morello cherry notes. Its degree of roasting is relatively light, it is ideal for filter coffee and delicious for cold brewing.
