Idedo Natural is an Ethiopian coffee from the iconic Yirgacheffe region, in the heart of the Gedeo zone. Grown between 1,960 and 2,100 meters above sea level, in a relatively cool climate conducive to slow cherry ripening, it expresses all the finesse and aromatic complexity characteristic of great Ethiopian crus. The Mount Idedo washing station, established in 2023, carefully selects cherries from various surrounding kebeles, including Idedo, Wogida, and Gerbota. Producers hand-harvest perfectly ripe cherries, which are then rigorously sorted before being dried whole on raised African beds for 12 to 21 days, with regular turning to ensure homogeneous drying. This natural process gives the coffee great aromatic intensity and remarkable sweetness. Made from Dega 74110 and 74112 varieties, this Arabica develops a vibrant and expressive profile. We opted for a relatively light roast, ideal for preserving all the vivacity and complexity of the terroir. In the cup, it reveals gourmet notes of candied strawberry, mango, and agave syrup, supported by a silky texture and luminous acidity. Particularly recommended for slow coffee.
