Discover our Ayla Sidamo Organic, an exceptional coffee grown between 1,950 and 2,000 meters above sea level in the mountainous Sidamo region of Ethiopia, the historical birthplace of coffee. Sourced from local varieties JARC 74110 and JARC 74158, this lot reflects the rich aromatic complexity and expertise of Ethiopian producers. This coffee comes from the Ayla washing station, founded in 2018 by Faysel Abdosh and supplied by nearly 800 smallholder farmers cultivating coffee on family plots of about half a hectare. Hand-picked with care, only perfectly ripe cherries are selected before being pulped and then fermented for 36 to 48 hours. The coffee is then washed with clear water and slowly dried on raised African beds, ensuring consistent quality and optimal aromatic expression. Certified organic, this coffee also follows a sustainable approach: the Ayla station actively contributes to local development through the construction of schools, improved access to drinking water, and connecting homes to electricity. In the cup, this Sidamo reveals an elegant and bright profile, characterized by notes of black pepper, cardamom, black cherry, and a beautiful livacity.
