The Honduran coffee selected by Corica comes from Copan, a department located in the far west of the country, known for its Mayan archaeological site. It is a 100% High Grown (HG) coffee cultivated between 1,000 and 1,250 m, an altitude where the mountains are swept by cool winds and the nights are cold. The lower temperatures and forest shade provide an ideal environment for the gentle development of the coffee cherry and its aromas, unlike what larger producers offer: coffee plants grown at lower altitudes where temperatures are higher to force the bean to mature more quickly, at the expense of aromatic development. This hand-picked coffee, with 2 to 3 passes, is organically grown and washed with clear water. The result in the cup is rather full-bodied, beautifully rounded, with pleasant notes of caramel and chocolate.
