This African grand cru owes it's name to the fortified village of Harar, situated on the tablelands in the East of Ethiopia. The coffee is picked by hand at between 1300 and 1800 meters of altitude. His fruity aroma is due to a particular drying process called "Natural" or "Unwashed". This ancestral procedure consists in drying the bean in the sunlight within the berry itself, spread out over sieves. The Unwashed method requires millenary know-how and grants the coffee a very profound aroma.
