Perched in the west of Loja, Ecuador, Finca Indera, owned by Manuel Romero, is an exceptional plantation nestled within a lush and preserved ecosystem. This coffee comes from Lot 1, a unique area where Manuel cultivates a natural mutation of the Geisha variety, which he named "Peach." Passionate and meticulous, he oversees every stage of production, from tree care to post-harvest processing. The farm benefits from an ideal climate due to its altitude and diverse vegetation, creating a true sanctuary where each coffee tree thrives under a natural canopy that regulates humidity and soil fertility.
This coffee is processed using the Honey method, where fully ripe coffee cherries are carefully depulped while retaining their sweet mucilage. Unlike washed or natural coffees, fermentation occurs with this protective layer, enhancing the bean's aromatic complexity. Drying then takes place in a temperature- and humidity-controlled warehouse, ensuring a uniform and stable result. This precise approach elevates the Geisha Peach variety, a rare mutation discovered on Manuel’s farm, whose cherries take on a bright, peach-like orange hue when fully ripe and exude a delicate floral fragrance.
This coffee reveals a bright and refined cup with vibrant aromas. From the first sip, mandarin notes shine through, followed by a delicate floral touch reminiscent of jasmine. The finish is silky and smooth, evoking the sweetness of white peach, extending into a soft and lingering sensation. The balance between lively acidity and natural sweetness makes this coffee a unique sensory experience, perfect for lovers of elegant and nuanced flavors.
