This gorgeous decaf comes from the department Caldas in Colombia. That's located right in the middle of the coffee growing region: the coffee axis or "eje cafetero". The soil there is rich, the climate is ideally suited and the mountain flanks offer a high enough altitude. To guarantee the highest quality, more than 3600 producers collaborate side by side with agronomists under the umbrella of one cooperative. Within that association, a lot of attention is directed towards the social and ecological aspect of coffee production: to connect and reconciliate man with nature.
In order to decaffeinate the beans, the sugar cane method is used. The beans are first steamed to open up their pores. Then they are rinsed with a solution derived from sugar cane and vinegar. This way the caffeine molecules within the beans bind to the surrounding fluid. That's how the caffein gets removed. At last the beans are left to dry until their moisture content reaches around 10-12% percent.
Expect a sturdy coffee with notes of chocolate and caramel and a thick, creamy mouthfeel.
