The so-called "Triangúlo" region in the state of Minas Gerais brings forth some of the most refined coffees in the world. This Santos fancy is picked by hand on top of the tablelands of the Alto Paranaiba in the heart of Cerrado, the vast tropical savanna that covers a fifth of Brazil's surface. The Cerrado encloses an ecosystem that is particularly suitable for coffee cultivation. The average temperature fluctuates between 18 and 22 degrees, the plants flower simultaneously and it stays dry during the harvest season. Nevertheless, only one coffee variety has developed there: the Acaía Cerrado.
